Title: How Could These Little Seeds Have Such A Big Impact On Our Health? Date: 3/19/2018
Speaker: Tanveer Ajimal
Specific Purpose: To inform my classmates about the effects of chia seed consumption on the human body at the
physical and molecular level.

Introduction:
1. Attention Getter: Many people, nowadays, want to become healthier, lose weight, or increase their energy levels
in daily life. With these goals, chia seeds have become the latest health craze and gained the reputation of being known as one of the super-foods. According to Merriam-Webster, Super food is defined as “a food that is rich in compounds (such as antioxidants, fiber, or fatty acids) considered beneficial to a person’s health.” It has come to peoples’ knowledge that chia seeds can help them become healthier and boost energy levels. They put it in every food they can think of, from drinks to snacks to meals. So, what can be inside these tiny seeds that can greatly impact our health? You are about to find out soon.

2. Central Idea: First off, I would like to say that these tiny chia seeds can impact one’s health physically and at the
molecular level.

3. Credibility Statement: I know this because I have tried chia seeds and I have also done research in the lab at the
molecular level to find out how they impact my body. In terms of the physical level I
can say that I did feel that I received an energy boost from consuming chia seeds. In
terms of the molecular, I will later explain to you what research has found to prove
whether chia seeds are a super-food or not.

4. Preview of Points: Today, I would like to inform everyone about what chia seeds are, how they impact the
human body physically, and how these seeds impact the human body at the molecular level.

Body:
1. Main Point 1: First, I would like to start with explaining what chia seeds are?

a. According to the article, “The Promising Future of Chia, Salvia hispanica L.” written by Norlaily Mohd Ali, chia seeds are also known as Salvia hispanica Labiatae in the scientific world. Chia seeds are a common and traditional food in Central and South America. It is most commonly grown in arid environments. Chia seed flowers can produce white or purple flowers. In this same article, chia seeds are described as “varying from black, grey, and black spotted to white, and the shape is oval with size ranging from 1 to 2?mm.”

b. These tiny seeds gained reputation for being healthy when people found out that chia seeds have nutritional benefits. According to an article on ABCNews named, “Chia Seeds the ‘It’ Food of 2013”, written by Genevieve Shaw Brown, chia seeds are known to contain high amounts of omega-3 fatty acids, which help lower cholesterol. Chia seeds are also very high in fiber, so eating too many chia seeds can upset the stomach. Drew Rosen, a nutritionist, recommends eating now more than one ounce of chia seeds per day. The reason why chia seeds are so popular are because they are so easy to use. People can use these seeds in pudding, use them as an egg substitute (for vegans), add them into yogurt, oatmeal, or smoothies and some people even add them to plain water.

c. In addition to these benefits, chia seeds are also known to help reduce weight. According to the ABCNews article, Lisa Goldberg, another nutritionist, says because chia seeds are high in fiber, they keep one full longer and prevent one form overeating. Chia seeds keep a person fuller for a longer period of time because when chia seeds are wet, they form a gelatinous coating around itself, which make them harder to digest. Since digesting them take more energy and keep a person form eating too much, it helps a person lose weight. Goldberg does not recommend substituting chia seeds for a meal because they do not provide enough nutrients and calories to a person’s body so that it can function properly. Goldberg also says that pregnant women should also add chia seeds to their diet because they provide omega-3 fatty acids for the developing baby’s growing brain. With chia seeds pregnant women do not have to worry about eating fish that may have mercury in them.

Transition: Since chia seeds have the reputation of being healthy, they can help people reduce the risk of diseases and
boost energy levels.

2. Main Point 1: Chia seeds contain substances that can help reduce the chances of diseases; however, the consumption of too many Chia seeds can also be bad for one’s health.

a. According to a Huffington Post article, “Chia Seed Benefits: 10 Reasons To Add Chia To Your Diet” written by Terri Coles, there are ten most common benefits of eating chia seeds. The benefits of chia seeds are that they help control diabetes and help improve blood pressure. They provide the body with fiber, omega-3 fatty acids, calcium, manganese, phosphorus, tryptophan (an amino acid) and protein. It has been said that chia seeds help reduce belly fat, but science has not proven this yet.

b. According to healthresearchfunding.org, an article name “Chia Seeds Side Effects,” chia seeds can also have some side effects to eating too many at once. If you have allergies to mustard seeds, it is advised that you also stay away from chia seeds. Allergic reactions can result in eruptions on the skin’s surface, watery eyes, and diarrhea. Any person taking medications for cancer should check with their doctor to see if it is okay to consume chia seeds. As mentioned earlier, these seeds are high in calcium, potassium, and iron, but too much of these seeds can also be harmful to the body. For older individuals, chia seeds may drop the blood pressure level too low. You also want to be careful of eating chia seeds with other forms of vitamins in case of the intake of too many vitamins. Bloating is another side effect of consuming too many chia seeds. As you can see, consuming an excess amount of chia seeds can result in negative effects on the body.

c. According to the article on verywellfit.com titled, “Can Chia Seeds Boost My Energy Level?” written by Sharon Basaraba, it has come to people’s attention that chia seeds help boost energy levels and help lose weight. However, is this claim true? According to this same article, “David Nieman, Director of the Human Performance Laboratory at Appalachian State University, has conducted some of the few research trials on chia seeds that exist, examining their role in weight loss, and reduction in disease markers.” In his research, the subjects took 50 grams (about 6 tablespoons) of chia seeds everyday. However, he did not find any changes in body mass or composition. Nieman says that chia seeds are a good source of energy because they contain a lot of fat. Chia seeds carry a significant number of calories in a small volume. Nieman and his colleagues also tested whether chia seeds have an effect on performance or not. There were two cyclist groups in the experiment: one group was given 25 grams of ground chia seeds and the other nothing. In the end it was found that the group that consumed chia seeds performed no better than those who did not get chia seeds. In theory, chia seeds are supposed to help you lose weight because they absorb water and expand in the stomach making one feel fuller. However, taking into consideration the calorie count and the high fat content, this may not be true. Further research still has to be done to confirm if chia seeds help lose weight or not.

Transition: Now that we have looked at how chia seeds impact the body physically, let’s look at how it impacts the body
at the molecular level.

3. Main Point 1: To prove that chia seeds help reduce weight using cell and tissue responses, there is still ongoing research at Los Angeles Valley College.

a. Before I go on to say what research has found on this topic, I would like to give from background information about our bodies. According to an article on National Center for Biotechnology Information, “Effect of different concentrations of omega-3 fatty acids on stimulated THP-1 macrophages” chia seeds have two omega-3 fatty acids: eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA), which inhibit Interleukin-1B. Interleukin-1B is a cytokine protein that mainly causes inflammation. If inhibited, it can also help reduce weight.

b. As I mentioned earlier, I have done research at Los Angeles Valley College to confirm if chia seeds help reduce weight or not, so now I will tell you how the experiment was performed and what conclusion we came to. For the experiment, we used J774-A mouse cells. Into one flask of mouse cells we injected chia seed oil and into the other flask we did not put any chia seed oil into it. Next we let them grow for 24 hours. After this, we tested the cells to see if they contained any Interleukin-1B. Our results showed that there was faint hint at Interleukin-1B, however, it was not enough to confirm if it was present or not. We were not able to determine this was because there was a lot of background from the solution we used to dye Interleukin-1B. As a result of this, we were not able to determine if chia seeds help lose weight or not. However, because definite results were not found, research is still ongoing in this topic and further experiments are being done to determine if chia seeds contribute to weight loss or not.

Conclusion:
1. Summary: Chia seeds are one type of superfood that can help improve one’s health in many ways.
2. Review: Today I have informed everyone about what chia seeds are, how they impact the body physically, and how they impact the body molecularly.
3. Tie to the Introduction: As shown today, one should not believe everything they hear. Today it was proven that chia seeds in fact do not boost energy levels or enhance performance. However, much research has still yet to be done.
4. Creative Conclusion Thought: So stay tuned in for more information on how chia seeds affect our health.
